Ingredients:
1 stick of unsalted butter
1/2 cup chopped red onion
8 cloves garlic minced
200 ml vodka (I used Smirnoff because it was on sale)
3/4 tsp white sugar
1 lb Roma tomatoes, chopped
1/4 cup fresh basil, chopped
1/4 cup fresh flat leaf (Italian) parsley, chopped
1/2 pint heavy cream
pinch of crushed red pepper (to taste)
fresh ground black pepper (to taste)
1 lb peeled deveined shrimp (if you wanna)
Method:
1. Melt butter in large saucepan over med low heat.
2. Saute red onion and garlic in butter until soft.
3. Add vodka, increase heat to medium and simmer 10 minutes.
4. Add sugar, tomatoes and fresh herbs. Simmer over medium heat for 30 minutes.
5. Stir in cream. Using an immersion/stick blender, blend until smooth. (If you don't have a stick blender you can pour it into a regular blender and then return to the pan)
6. Simmer over medium to reduce 30 minutes to an hour.
7. Add shrimp and cook until shrimp are done.
8. Pour over your favorite pasta.
