Anyway, as a result I have some extra marshmallows to use up. This recipe was on the back of the bag of mini peppermint marshmallows and it's delicious.
Ingredients
1/2 tsp salt
12 cups popped popcorn (the recipe calls for air popped but I don't have an air popper so I made mine on the stove, 1 tbsp kernels makes about 2 cups popcorn)
4 oz semi-sweet Baker's chocolate
1 stick butter
40 Jet-puffed peppermint mini marshmallows (i used about 80)
1. Heat oven to 275 F, grease a cookie sheet
2. Sprinkle 1/4 tsp salt over popcorn
3. Melt chocolate and butter in a saucepan over low heat, stirring frequently
4. Add marshmallows, stir until melted
5. Remove from heat, stir in remaining 1/4 tsp
6. Pour over popcorn, toss to coat. Spread onto grease cookie sheet.
7. Bake 25 minutes or until crisp, stir halfway through cooking.
