I did not pic these blueberries. I thought I had some in my freezer from last season and so I planned to make this bread to use them up. Got all the other ingredients together and couldn't find the blueberries. Good planning on my part. After a run to the store I was ready to bake.
Ingredients
1 1/2 cups all purpose flour (plus 1 spoonful)
1 tsp baking powder
1 1/2-2 cups blueberries, rinsed and dried
1/4 tsp cinnamon
1 cup white sugar
1 tsp vanilla
1/2 tsp salt
2 eggs
1 cup sour cream
1/4 cup vegetable oil
juice and zest of one lemon
Glaze
juice and zest of one lemon
2-3 cups powdered sugar
Method
1. Coat blueberries with 1 spoonful of flour, toss to coat
2. Mix together flour, baking powder, cinnamon and salt
3. Mix in eggs, sugar, vanilla, oil, sour cream, lemon zest and lemon juice. Mix well.
4. Gently stir in 3/4 of the blueberries
5. Fill 3 greased mini loaf pans with batter. Top with remaining blueberries.
6. Bake in 350 degree oven for 50 minutes. Let cool completely before removing from pans. I popped mine in the freezer.
7. To make glaze whisk together juice and zest of remaining lemon. Slowly add powdered sugar until desired consistency. I wanted mine really thick so I used almost 3 cups. Drizzle glaze over cooled loaves.
