Double Chocolate Zucchini Bread (makes 6-7 mini loaves)
Ingredients
2 large eggs
1/3 cup honey
1/2 cup vegetable oil
1/2 light brown sugar
2 tsp vanilla
1 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp espresso powder
1/3 double process cocoa powder
1/2 + 1/3 cups all purpose flour
1/2 + 1/3 cups pastry flour
2 cups zucchini
1 cup chocolate chips
Method
1. Using food processor or grater, shred zucchini. Squeeze out excess water. Leave in strainer to allow any additional water to drain away.
2. In large bowl, combine flours (if you don't have pastry flour, you can use all purpose flour, the bread will just be a little denser), salt, baking soda, baking powder, espresso powder and cocoa powder.
3. In different bowl, whisk together eggs, honey, vegetable oil, brown sugar and vanilla.
4. Add wet ingredients to dry ingredients slowly stirring by hand until just mixed.
5. Add shredded zucchini and chocolate chips. Mix until well combined.
6. Grease and flour 6-7 mini loaf pans. Fill 3/4 full. Bake in preheated 350 degree oven for 40-50 minutes.
