I got my Kitchenaid 600 about 6 months ago. I've been collecting all the attachments slowly since then. I found this Ice Cream maker attachment on eBay for a great price so I snapped it up. My friend Kersey and I are both addicted to ginger so I decided to make ginger ice cream for it's first run.
Ingredients:
8 egg yolks
1 cup white sugar
1/4 tsp coarse salt
2 cups whole milk
2 cups heavy cream
1 tsp vanilla
4-5 ounces ginger, peeled and minced (I used my food processor)
Method:
1. In medium saucepan (off heat) whisk together egg yolks, sugar and salt until pale yellow. slowly whisk in milk and cream.
2. Cook over medium heat until thickens slightly (should resemble a loose pudding)
3. Remove from heat and stir in ginger. Cover and let stand until completely cooled.
4. Stain through a fine mesh sieve or food mill.
5. Stir in vanilla.
6. Churn in ice cream maker until desired consistency. About 35 minutes.
7. Transfer to a freezer safe container and freeze until firm.
